Lunch

I've been trying to bring better lunches to work, partly to save money and partly to eat healthier. I was especially pleased with my lunch today. I had a nice salad of spinach, romaine, and red leaf lettuce with green bell pepper, tomato, olive oil packed tuna, and balsamic vinaigrette, some celery sticks, a whole wheat pita with roasted red pepper hummus, and two clementines for dessert. Not sure what I'll bring tomorrow, but I hope it will be just as yummy. What do you guys like to have for lunch?

If I'm not eating lunch at one of the shops on campus, I usually bring some Campbell's soup or Hormel chili. I'm not really a cook like you. You should send me some packaged lunches and I could pay you for them. :)

You're funny Diggy. Nothing in my lunch required any cooking- just prep work. If you want to take the easy route- buy yourself a bag of salad mix, the greener the better, and baby spinach and mix them together. Choose 2 veggies that you like, chop them up. Then buy a package of prepared hummus and whole wheat pitas. I bet it would take you less than an hour to chop your veggies and put everything in containers for your entire week's worth of lunches.

YUm! I always pack salad or soup and a few munchies. So easy and I never get sick of it. Munchies include an apple, banana, orange, whatever is in season and some carrots, or celery and hummus usually.

Have you read anything about bento boxes? I think they might be right up your alley
